Akki roti


Ingredients:-


Rice flour - 1  1/2 cup
Green chili chopped - 2
Curry leaves chopped- 2 tbsp
Cilantro chopped - 2 tbsp
Onion chopped - 1/2 cup
Cumin seeds - 1/2 tbsp
Coconut shredded - 2 tbsp
Turmeric - 1/4 tbsp
Salt to taste
carrot shredded  - 1/2 cup
Warm water to mix accordingly
Oil as needed for frying

Procedure:-

1-First take a bowl add all the ingredients together and mix it first then add warm water as needed and mix slowly. Dont add too much water the dough must not be  thin it should be like chapathi dough.

2-Now take a pan heat it simultenously do these rotis with help of hand by using a plastic cover or aliminium foil. I have the puranpoli sheet so i used that.
3-So now place the sheet on a plate or any flat surface apply oil to it so it does not sticks. Then a ball size dough place it on the sheet and start pressing from inwards to outwards in a flat way and then flip that sheet on to the stove and fry it by appling oil on both sides.
 
 

4-Fry until golden brown n serve with pickles.

Mulli roti(radish chapathi)



Ingredients:-


For Dough :-

Wheat flour - 2 cups
salt to taste
Oil - 1 tbsp
sugar - 1 tbsp
Water as needed

For stuffing:-

Radish(medium) - 1 grated
Salt to taste
chili powder - 1/4 tbsp
Coriander powder - 1 tbsp
Cumin powder - 1 tbsp
Cilantro chopped(kothimeera)

Procedure:-

1-Take a bowl add all the dough ingredients and mix together into a dough by adding water.
2-Now in another bowl add all the ingredients together and keep aside for 10 min.  so the radish consumes the flavor of masala.
3-Now roll the chapathi into a medium size and stuff the masala and close it.

4-Now dip in the wheat flour to avoid sticking. And roll them evenly and fry them into golden color by adding oil on both sides evenly.


Enjoy them hot with pickle and curd.

Butter garlic Naan




Ingredients:-

All purpose flour - 2 cups
Warm Water - 2/3 cup
Yeast - 1tbsp
Salt to taste
Sugar - 1tbsp
Oil - 2 tbsp
Butter
Garlic cloves cut into tiny pieces

Procedure-

1-First add the flour in a bowl and also add salt and sugar to it and cooperate it.
2-Now add yeast in the warm water and sit aside for 5-6 min.
3-Now add the water to the flour and mix properly and knead the dough.

4-The dough should be very soft n sticky. Then it is the correct process to make the naan.
5-Now add oil on top of it and knead it once again and cover it with damn cloth and keep it aside for 30 min.
6-Now u can see that the dough will be increased into double of its size.
7-Now knead it once again and make it into equal size bolls and roll them evenly and now place the garlic pieces on top of it and press them gently.
8-U may bake them or even fry them on u r pan. When it is fried on one side then turn it over to another size and apply butter to it and serve hot.


These naan tastes good with chole and butter chicken and even with palak paneer. Try this friends and enjoy the recipe.

Paneer Paratha



Ingredients:-

Paneer- 1 cup
Onion- 1/2 chopped
Garlic- 2 chopped
Coriander powder- 1/2 tbsp
Zeera powder- 1/2 tbsp
Chili powder- 1/2 tbsp
Salt To Taste
Turmeric- A pinch
Cilantro chopped- 1/2 cup

For paratha :-

Wheat flour- 11/2 cup
Salt to taste
Sugar- a pinch
Oil- 1 tbsp
Water required

Procedure:-

1-First take paneer and grate it finely and keep aside
2-Take a pan add oil heat it and add garlic chopped a fry for a min then add the onion and saute well.
3-Then add the coriander powder, salt, chili powder, turmeric and mix well then add paneer and mix well.

4-Add cilantro finally. Now take a bowl add the paratha ingredients and make a soft dough.
5-Now take a small amount of dough and spread the flour and roll the paratha and stuff the paneer at the center and close it and roll them again.
6-Now fry them until golden spots appear on both the sides.


7-Serve hot with curd or any pickle.

Note:-


Prepare the paneer curry before u prepare  the paratha's because the paneer may turn into hard.
If u want to prepare early and make u r work easy heat in the oven.

Aloo Paratha



Ingredients:-

Potatoes- 3 boiled
wheat flour - 2 cups
Onion- 1/2 chopped finely
Chili powder- 1/2 tbsp
salt to Taste
Coriander powder- 1 tbsp
Zeera powder- 1 tbsp
Chat masala- 1/2 tbsp
Cilantro chopped
Sugar a pinch
Water for mixing dough
Oil required

Procedure:-

1-First boil the tomato and peel them then grate the potatoes and keep aside.


2-Now take the  wheat flour and add little salt, oil and a pinch sugar and make a soft dough with the help of water and set aside for 5 min.
3-Now take the grated potato in a bowl and add salt, coriander powder, zeera powder, chili powder, chat masala , onion, cilantro and mix well.

4-Now take the dough and make equal size bolls and also make the equal size bolls of potato masala start rolling them then at the center add the potato masala and close the chapathi dough finely so the masala does not comes out while rolling. Now roll the stuffed chapathi carefully and it should be even.
5-Now Take a frying pan heat it and fry them evenly until golden color. Ready to serve.


The best combination with any chapathi is curd pickle just take a bowl and add any pickle you like and curd  mix it serve it.

chapathi with Spinach(Palak)

Spinach chapathi with mixed curd and pickle



Ingredients:-

Spinach - 1 bunch(palak)
Garlic - 3 cloves
Zeera- 1 tbsp
Wheat flour- 2 cups
Sugar- 1/4 tbsp
Salt - 1/4 tbsp
Oil- 2 tbsp

Procedure:-

1-First clean and cut the palak .
2-Now take a pan add tbsp of oil and then add garlic cloves and zeera and fry for a min the add palak and sprinkle a pinch of salt to it and close the lid and cook it in simmer for 4-5 min.

3-Now cool it off and then make a fine paste of the palak mixture.
4-Now in medium size bowl add wheat flour, salt, sugar, oil and the grind mixture into it and mix well now use water for making it into a soft dough.


5-Now separate the dough into small equal bolls and roll them with a rolling pin.

6-Now preheat the pan in higher flame the turn into mediun so the chpathi does not burns. Now fry them both the sides by spreading oil until golden spots appears.


7-Serve hot with any curry

Chapathi with fresh methi leaves



Ingredients:-

Wheat flour- 1  cup
Fresh methi leaves- 1 cup(only leaves)
Salt to taste
Oil-2 tbsp
Chilli powder- 1/4 tbsp
Turmeric- 1/4 tbsp
Zeera- 1/2 tbsp
Water- 1 cup

Procedure:-

1-First clean the methi leaves properly and fry then in a frying pan by adding little oil and sprinkle a pinch of salt and fry properly so the bitter of leaves will reduce.


2-Now take a bowl add wheat flour,oil , salt,  turmeric, chilli powder and the fried m,ethi leaves and miv well by adding water little by little to form a soft knead.

3-Now separate the knead into equal small bolls and roll them by rolling pin in round shape and keep aside.
4-Now take a frying pan and fry the chapathis on both the sides by spreading little oil until they appear in golden colour.


5-Ready to eat serve with curd and  any pickle mixed in a bowl  together or with any curry.
