Gongura Mutton


Ingredients:-

Mutton - 1 lb
Fresh Gongura - 1 cup (without stems)
Onion chopped - 1 cup
Ginger garlic paste - 1tbsp
Chicken masala - 1 tbsp
Garam masala - 1/2 tbsp
Chili powder - 1/2 tbsp
Salt to taste
Oil  for cooking


Procedure:-

1-Take the mutton clean it and keep it aside.
2-Now take a pressure cooker add little oil heat it and add mutton and all the dry spices and mix and add 1/2 cup water and close the lid and let it cook until 4-5 vessels.
3-Let the pressure cool down. once the lid is opened.
4-Take a wok add oil heat it add onions and fry till golden brown and add ginger garlic paste fry for some more time then add gongura leaves until the oil comes out.
5-Then add the cooked mutton and fry for 2-3 min and then add garam masala and 1/2 cup water to it and boil for 5 more min. Its ready .

Gongura Mutton Curry


Ingredients:-

Mutton - 2 lb (cut n cleaned)
Gongura leaves - 2 cups cleaned
Green chili - 4 sliced
Cardamoms - 3
Cinnamon stick - half
Cloves - 3
Bay leaf - 1
Black cumin seeds- 1/2 tbsp
Onion - 1 finely chopped
Ginger garlic paste - 1 tbsp
oil as needed
Cumin powder - 1 tbsp
Coriander powder - 1 tbsp
chili powder - 1/2 tbsp
Salt to taste
Garam masala powder - 1/4 tbsp
Fresh cilantro leaves chopped
Water -1/2 cup

Procedure:-

1-First take a pressure cooker add mutton then add coriander powder, salt, chili powder, cumin powder mix and add 1/2 cup of water and close the lid. cook it till 5-6 whistles.
2-Now take a wok and add oil then add whole garam masala and fry for a min or so. Then add onion and green chili to it and fry until they turn translucent . Then add ginger garlic paste and cook till the raw smell disappears.
3-Now add the gongura leaves and fry until the oil separates from it in a low flame. Then add salt as needed according to the gravy. Because mutton has the salt as needed.
4-Then add the cooked mutton and mix well. fry for a min or so. Then add water as needed for gravy accordingly.
5-Finally add garam masala and cilantro as garnish. Serve hot with rice or roti.

Mutton curry in Kerala style



Ingredients:-

Mutton - 1lb
Onion - 2 no. chopped
Tomato - 1 no. chopped
Turmeric powder - 1/4 tbsp
Cumin seeds - 1/2 tbsp
Cloves - 3
Ginger garlic paste - 1 tbsp
Chili powder - 1/2 tbsp
Cilantro chopped - 1/2 cup
Salt to taste
Oil required


For masala :-

Khas Khas - 1 tbsp
Dry red chili whole - 3- 4
Coriander whole seeds - 1 tbsp
Cumin seeds - 1tbsp

Procedure:-

1-First clean the mutton and keep aside.
2-Now dry roast the masala ingredients and make a fine powder.
3-Take a cooker or heavy bottom pan add oil heat it then add cloves and cumin seeds and saute for a min.
4-Then add onions, green chili, curry leaves and  saute well.

5-Now add the ginger garlic paste when onion turns transparent . And fry for a min or so.
6-Now add the tomatoes and fry until the tomato turns into paste.
7-Now add the masala powder which we prepared earlier and also add salt, turmeric, chili powder and mix well and add the mutton fry for 2 min then add enough water according to gravy and close the lid and cook until 4-5 vessels.
8-Now garnish with cilantro. Serve hot.

Lamb Biryani



Ingredients:-

Mutton- 1  lb (cut and cleaned)
Basmati rice- 2 cups (washed)
Water- 2 1/2 cups
Coconut water- 1 1/2
Green chillis- 3 sliced
Pudina(mint leaves)- 1 packet finely chopped
Coriander leaves(cilantro)- 1/4 packet chopped
Onion- 1 large sliced
Tomato- 1 chopped
Curd- 1 cup (beaten)
Chilli powder- 1/2 tbsp
Salt to taste
Garam masala- 1/4 tbsp
Mutton masala- 1 tbsp
Turmeric- 1/4 tbsp
Dhaniya powder- 1/2 tbsp
Zeera powder- 1/2 tbsp
Cashew- 4 tbsp
Curry leaves- 5 count
Ginger garlic paste- 1 1/2  tbsp
oil- 2 tbsp
Ghee- 1 tbsp


Garam masala Ingredients :-

Star anise- 1
Biryani leaf- 2
Cardamoms- 4
Cloves- 4
Cinnamon stick- 1 stick 2 inch
Shah zeera- 1 tbsp

Procedure for marination:-

1-Take a bowl clean the mutton properly.
2-Now add the salt, turmeric,chilli powder, mutton masala, dhaniya powder, zeera powder,Garam masala, ginger garlic paste and mix well and marinate for 1- 2 hours.


3-Store it in refridgerator for marination.

Procedure for biryani:-

1-Now take a pressure cooker add ghee and tbsp of oil and add the garam masala ingredients and cashew nuts,green chillis,curry leraves and fry until golden colour.

2-Now add the marinated mutton,Coriander leaves some,pudina chopped  and fry for a min and add 1 cup of water and boil it until 7-8 vessels.So it cooks well.

3-Now take medium size wok heat it add tbsp of oil and add onion and fry well and then add 1/2 tbsp of ginger garlic paste and fry well until golden colour.

4-Now add the tomato and fry well now add the cooked mutton into the pan and if there is any water in the curry then let it cook until the water evaporates totally.


5-Now add the washed basmati rice and fry for a min carefully rice should not break.


6-Now add the water, salt and taste the water if necessary add garam masala powder and salt. The water must be very little salty.

7-Now close the lid and cook it in low flame so the bottom does not burns and cooks evenly.




Ingredients for raita:-

Curd- 1 cup
Onion- 1 cup chopped finely
Cucumber- 1/4 piece peeled and chopped finely
Tomato- 1/2 chopped
Green chillis- chopped- 1
Coriander leaves chopped
Salt to taste

Procedure:-

1-First take the chopped onions and add water and little salt and soak it for 10 min so it decreases its spice.

2-Now take bowl add chopped onions, green chillis, tomato, cucumber, coriander, curd and salt and add little water and mix well.

Serve this with any biryani tastes good.

Mutton curry in indian style with rich taste

Ingredients:-


Mutton-1 lb
Ginger garlic paste-1 tbsp
Dhaniya powder-1 tbsp
Zeera powder-1 tbsp
Salt to taste
Meat masala powder-1 tbsp
Turmeric-1/4 tbsp
Chilli powder-1/2 tbsp
Green chillis-3 chopped
Onion-1 large cut into slices
Coconut milk-1 cup
Tomato puree-1 cup
Water-2 to 3 cups
Coriander leaves chopped
Garam masala powder-1/2 tbsp or whole garam masala

Procedure :-


*First clean mutton and keep aside.The size of the pieces
of  mutton depends on how u eat.
*Now take a pressure cooker and add the chopped
onions, coriander leaves, chilli powder, salt, ginger garlic paste,
 dhaniya powder, turmeric powder, chilli powder, meat masala, zeera
powder, coconut milk, mutton and  a 1 1/2 cup of water and close the lid and let
it cook until 7 to 8 vessels.
*Then open the lid and take out the mutton pieces from
the cooker and add tomato puree into it and boil it for a min then
add the mutton pieces  into it and cook it for 1 more minute .
*Thickness of gravy depends on how u eat.Then garnish it with coriander ,cucumber
and tomato.
