Chicken Dhum Biryani



Ingredients:-


Chicken - 1  lb (cut and cleaned)
Basmati rice- 2 cups (washed)
Water- 6 cups
Green chilies - 3 sliced
Pudina(mint leaves)- Hand full
Coriander leaves(cilantro)- Hand full
Onion- 1 large sliced
Chili powder- 1/2 tbsp
Cumin seeds- 1 tbsp
Lavang (cloves) - 5
Cardamoms - 5
Star anise - 2
Biryani leaf (bay leaf)  - 2
Red and green Food color - Pinch each.
Salt to taste
Ga ram masala- 1/4 tbsp
Chicken masala- 1 tbsp
Turmeric- 1/4 tbsp
Dhaniya powder- 1/2 tbsp
Zeera powder- 1/2 tbsp
Cashew- 4 tbsp
Curry leaves- 5 count
Ginger garlic paste- 1 1/2  tbsp
oil- 2 tbsp
Ghee- 1 tbsp

Procedure:-

1- First boil the rice in rice cooker or in a wide pan by adding water , cumin seeds, 1 bay leaf, 1 clove, 1 cardamom, salt ,oil and boil it until the rice is 70 % cooked.
2-After the rice is done drain the water by using a strainer and place it under cold running water and let the water drain totally.


3-Now in a pan add ghee and oil and add the rest garam masala ingredients, green chili, curry leaves, cashew and fry well.

4-Add onions and fry them then add ginger garlic paste and fry until the raw smell disappears.

5-Now add the washed chicken and fry for a min or so and then add salt, chili powder, cumin powder, coriander powder , chicken masala and give it  a mix.

6-Now close the lid and let it cook.

7-Now take the food colors and mix in water separately.

8-Let the chicken cook well . when finished remove it from the stove.
9-Now set the temperature of the oven to 250 degree  F for 30 min. It should cook for 27 min.
10-Now take a baking tray and spray oil and start layering on it first spread the rice then the chicken curry then food color and cilantro leaves and mint leaves over it. Repeat the process until u r done.



11-If desired u can even spread fried onions on top of it. Now close the tray with aluminium foil and place it in the oven. 

12-Now give a good mix to it when u r done and serve hot with raita.
