Vankaya tomato Kurra


Potato- 2 peeled and diced
Bringal- 1 diced
Tomato- 1 chopped
Green chillis- 2 sliced
Onion- 1 sliced
Chilli powder- 1/2 tbsp
Salt to taste
Chicken masala- 1 tbsp
Curry leaves- 5 count
Turmeric- 1/4 tbsp
Fresh coriander leaves chopped


1-First clean and cut the vegetables and  keep aside.
2- Now take a pan and add oil heat it and add the green chillis and curry leaves then add the onions and fry properly until golden colour now add the tomatoes and fry well until the tomato turns in to paste.

3-Now add the cut vegetables , chilli powder, salt ,turmeric,  chicken masala  and coriander leaves to it and mix well. Now cook it for 5 min by closing the lid in simmer.

4-Now add 1 cup of water mix well and close the lid and cook in simmer. Check it time to time  and stir it so that the bringal does not becomes  paste.

5- Now the curry is ready serve hot with rice or chapathi.
