Noodles- 1 packet (Any brand)
Cabbage- 1/4 cup chopped thinly
Onion- 1 medium sliced
Carrot - 1
Green peas- 1/2 cup
Bean Sprouts - 1/2 cup (optional)
Salt to Taste
Chilli sauce- 2 tbsp
Tomato sauce- 2 tbsp
Vinegar- 2 tbsp
Soya sauce- 2 tbsps
Green chillis- 3 sliced
Curry leaves- 5 count
Capsicum- 1/4 sliced
Spring onions- 2 stems chopped
Fresh cilantro leaves- 1/4 cup
1- Boil the noodles in a wide pan by adding water, salt and oil and filter the water and then place the noodles under cool running water.
2- First take a medium size wok or pan and add tbsp of oil heat it and add 3 eggs and sprinkle little salt on it and scramble them in this way and keep aside.
3- Now in the same pan add oil and heat it then add onion and fry until transparent and then add all the chopped vegetables and fry them until cooked then add egg scrambled also and mix well.
4- Now add the chilly sauce, tomato sauce, salt, vinegar and soy sauce and mix well. Now add the boiled noodles and toss well so the vegetables will spread evenly.
Noodles i used wheat noodles in this recipe it is also gud for health. And this can be taken as break fast or snack item. We can also add chicken in this as we used egg and all kinds of vegetables. And we can also use any kind of meat with this same process.
