Gongura Mutton Curry


Ingredients:-

Mutton - 2 lb (cut n cleaned)
Gongura leaves - 2 cups cleaned
Green chili - 4 sliced
Cardamoms - 3
Cinnamon stick - half
Cloves - 3
Bay leaf - 1
Black cumin seeds- 1/2 tbsp
Onion - 1 finely chopped
Ginger garlic paste - 1 tbsp
oil as needed
Cumin powder - 1 tbsp
Coriander powder - 1 tbsp
chili powder - 1/2 tbsp
Salt to taste
Garam masala powder - 1/4 tbsp
Fresh cilantro leaves chopped
Water -1/2 cup

Procedure:-

1-First take a pressure cooker add mutton then add coriander powder, salt, chili powder, cumin powder mix and add 1/2 cup of water and close the lid. cook it till 5-6 whistles.
2-Now take a wok and add oil then add whole garam masala and fry for a min or so. Then add onion and green chili to it and fry until they turn translucent . Then add ginger garlic paste and cook till the raw smell disappears.
3-Now add the gongura leaves and fry until the oil separates from it in a low flame. Then add salt as needed according to the gravy. Because mutton has the salt as needed.
4-Then add the cooked mutton and mix well. fry for a min or so. Then add water as needed for gravy accordingly.
5-Finally add garam masala and cilantro as garnish. Serve hot with rice or roti.
